We have had a busy summer so far, we spent a week in Ontario visiting my husband’s family, and we just got back from a camping trip to the Yukon and Alaska.
The Ontario Liquor Board also puts out a magazine with recipes similar to the one in BC! I was excited on the front of the magazine was a blueberry white chocolate lavender cheesecake. Of course as soon as I got home I had to make it.I made it into a gluten free version with my own little spin by topping it with blueberry sauce! Boom! It made it over the top! My brother in law even ate two pieces, which never happens, so I have to brag just a little.
The blueberry sauce was very easy to make only 3 ingredients and very little sugar, which is optional.
In Ontario we had the pleasure of my husband’s cousin Kyle cooking us an amazing duck confit one night, wow it was amazing! It tasted like more!
Our Yukon & Alaska trip was amazing as well, I have never been up there before. The views were amazing, and the landscaped changed daily. In 9 days we drove 3930 km & spent 48 hours in the truck total, best anniversary & birthday present a girl could ask for. And to boot when we got home my amazing husband made an incredible birthday dinner for me, gluten free beef wellington & flourless chocolate. This was first time he baked, the nephews even helped him decorate it!
Hope you are all enjoying your summer, what adventures have you been up to?
